Let’s face it, life is busy. So, having a delicious meal you can throw together to satisfy everyone. Sunday night was no different; my husband and I might not have had Pathfinder, but I still needed something delicious to make. Sometimes the most delicious are the ones that we kind of just throw together.
Last night’s dinner was a hit; there are plenty of leftovers for lunch today and for dinner tonight.
Asian inspired chicken vegetable bake
Ingredients
Method
- Preheat oven to 350
- Mix together the sushi rice seasoning and set aside so that the sugar and salt and dissolve.
- Measure out rice into bowl of rice cooker
- Cover rice with cold water and allow to soak for 15 minutes
- After rice has soaked rinse rice under cold water until water runs clear. Fill with enough water to reach the first knuckle on your middle finger. Place rice in rice cooker and cook per machine instructions.
- Cut chicken into 2" cubes and put into a large bowl
- mix together marinade ingredients and set aside
- Peel and cut the parsnips in half widthwise then in half length wise and then slice into 1" thick slices. Place in the bowl with the chicken.
- Wash and cut the potatoes into quarters and place in the bowl with the chicken.
- Dump both the green beans and the broccoli into the bowl
- Dice the onion and put into the bowl with everything else.
- Add the garlic to the bowl and then pour in the marinade and mix. Allow to sit for at least 30 minutes prior to baking.
- Pour mixture onto two half sheet baking pans, and bake for 35 minutes.
- Once rice is done pour vinegar mixture over, mix and enjoy.
